Fiddlehead Salad

Fiddlehead salad – the first fresh greens for us! Yes they’re an acquired taste but So nutrious and once you acquire the taste šŸ˜‹ šŸ˜‹!
Honestly I just tossed everything together until the proportions looked right – I’ll attempt to give you amounts that I used but adjust it to your taste!

āž”Fiddleheads – 3 cups
āž”Bacon -1/2 to 3/4 of a pound
āž”Pine Nuts 3/4 cups
āž”Sweet onion 1/4 to 1/2 cup
āž”Maple Vinegar 1/3 cup
āž”Olive oil 1/3 cup
āž”Profumo del Vermont from @trenchersfarmhousevt – add some, then add some more until it taste right to you!

I tossed everything into a bowl, whisked the maple vinegar, olive oil then poured into the bowl and mixed. Add and stir spice mix – start with a little then add as needed.

Good as is or let marinade in the fridge a couple hours before serving.
